Weights are estimates. Together, the ingredients weigh about 465 g before cooking, which is about 95 g per serving.
Steps
Add the cashews, pecans, shredded coconut, soaked dates, water, and a pinch of salt to a blender or nut grinder. Pulse until the mixture is thoroughly combined. Taste it and adjust the sweetness if needed, adding another pinch of salt if desired.
Line a large baking sheet or a suitably sized food-storage container with parchment paper.
Transfer the nut-and-date mixture to the lined surface and shape it into a rectangle as evenly as possible.
Place the shaped mixture in the freezer for about 25 minutes, until it firms up but is not frozen solid.
Remove the firmed mixture from the freezer and cut it into bars. The source yields about 4–5 bars.
Melt the dark chocolate in a large bowl that is wide enough to accommodate the bars.
Dip the bars into the melted chocolate, coating them on all sides. Use a spatula to help spread the chocolate evenly where needed.
Place each coated bar on the parchment paper, leaving space between the bars so they do not stick together as the chocolate firms. Repeat until all the bars are coated.
Refrigerate the coated bars for about 40 minutes to 1 hour, until the chocolate has firmed.
Enjoy the bars chilled and store leftovers in the refrigerator.
Notes
The source notes that raw or roasted nuts may be used; roasted nuts provide a deeper flavor. For extra crunch, leave some nut pieces larger. Cinnamon or cacao can be added to the nut mixture for variation. Keep coated bars separated on the parchment while the chocolate sets.
