- 2 lb pork ribs (Cut into bite-sized pieces)
- 1 tbsp baking soda (For tenderizing)
- cold running water (For rinsing the ribs)
- 2 tbsp dark soy sauce (For the marinade)
- 2 tbsp Shaoxing wine (For the marinade)
- 2 tbsp oyster sauce (For the marinade)
- 1 tsp white pepper (For the marinade)
- 1 egg (For the marinade coating)

- 4
Heat frying oil to 350°F / 175°C.
- 5
Fry the coated ribs for 6–8 minutes, until they are deep golden brown, crispy, and cooked through.
- 6
Remove the ribs from the oil and let them rest for a couple of minutes before serving.
Notes
The source does not specify the type or amount of frying oil, frying equipment, whether the ribs should be fried in batches, or an internal doneness temperature. Use enough oil for frying and verify the ribs are cooked through.
