Ingredients

  • 2 lb ground beef
  • 1 medium onion (Grated and strained through cheesecloth or a paper towel)
  • 2 tsp salt (For the kabab mixture)
  • 1 tsp black pepper (For the kabab mixture)
  • 1 tsp sumac
  • 1 tbsp ghee (For the kabab mixture)
  • 2 tbsp saffron water (For the kabab mixture)
  • 1 tbsp butter (For warming in the rice pot)
  • 2 cardamom pods (Source spelling normalized from “cardommon”)
  • 1 cinnamon stick
  • 1 cup basmati rice (Soaked and washed)
  • 1.5 cups water (For cooking the rice)
  • salt (For the rice, amount not specified)
  • butter (Add some on top of the rice at the end; amount not specified)
  • saffron water (Add some on top of the rice at the end; amount not specified)
  • vegetables (Roast some vegetables on the side; type and amount not specified)

Steps

  1. 1

Grate the onion, then strain it thoroughly through cheesecloth or a paper towel to remove excess liquid.

  2. 2

Combine the ground beef, strained onion, 2 teaspoons salt, black pepper, sumac, ghee, and 2 tablespoons saffron water.

  3. 3

Form the seasoned beef into long kababs. Make indents along each kabab with a chopstick, or use a proper skewer and make the pattern by hand.

  4. 4

Cook the kababs under the broiler on high for 7 minutes on each side.

  5. 5

Warm 1 tablespoon butter in a small pot.

  6. 6

Add the cardamom pods and cinnamon stick, and sauté for a few seconds.

  7. 7

Add the soaked and washed basmati rice and 1.5 cups water.

  8. 8

Add salt and cook until the water level is even with the rice.

  9. 9

Reduce to a simmer and cook for 10 minutes.

  10. 10

At the end, add some butter and saffron water on top of the rice, then leave the pot covered.

  11. 11

Roast vegetables separately and serve them alongside the koobideh and saffron rice.

Notes

The source does not specify the amount or type of saffron used to make the saffron water, the amount of finishing butter or saffron water, the type of vegetables, or the exact number of kababs. It also does not state a resting time for the kabab mixture or a precise rice heat setting beyond simmering.
