Ingredients
- 300 g Chicken breast (cut against the grain into strips)
- 1 g Hungarian paprika
- 1 g Garlic granules
- 30 g Water
- 12 g Shio koji (salt malt)
- 1 Egg (beaten)
- 100 g Original cornflakes (Kellogg's original flavor recommended; crushed)
Steps
- 1
Cut the chicken breast against the grain into chicken strips (tenders).
- 2
In a bowl, combine the chicken strips with 1g Hungarian paprika, 1g garlic granules, 30g water, and 12g shio koji. Mix well by hand and let marinate for 15 minutes.
- 3
Crush 100g of original cornflakes into small pieces (you can use a food processor or place them in a bag and crush them).
- 4
Dip each marinated chicken strip into the beaten egg liquid to coat thoroughly.
- 5
Roll the egg-washed chicken in the crushed cornflakes, pressing lightly to ensure the crumbs adhere and do not fall off.
- 6
Place the chicken in the air fryer. Use the 'steam fry' mode (if available) or standard air fry mode at 180°C (350°F) for 12 minutes. No oil spray is required.
Notes
The author notes that shio koji (salt malt) acts as a natural tenderizer and flavor enhancer. If using a standard oven instead of an air fryer, the same temperature and time (180°C for 12 minutes) can be used, though you should monitor for doneness.
