Ingredients

  • 6 large russet potatoes (Cut lengthways into thick chip-size pieces; trim the ends to create square shapes.)
  • salt (To taste, for the parboiling water and potato coating.)
  • oil (For frying.)
  • 1.5 tbsp all-purpose flour (The source spells this as “al purpose flour.”)
  • 1 tsp cornstarch
  • 1 tbsp paprika powder (For the peri peri seasoning.)
  • 1 tbsp garlic powder (For the peri peri seasoning.)
  • 1 tbsp onion powder (For the peri peri seasoning.)
  • salt (To taste, for the peri peri seasoning.)
  • 1 tbsp dried parsley (For the peri peri seasoning.)
  • 1 tbsp dried oregano (For the peri peri seasoning.)
  • 1 tsp cayenne powder (For the peri peri seasoning.)
  • 1 tbsp brown sugar (For the peri peri seasoning.)
  • 1 tsp black pepper powder (For the peri peri seasoning.)
  • 0.5 tsp MSG (Optional; for the peri peri seasoning.)
  • 0.5 cup mayonnaise (For the spicy garlic dip.)
  • 2 tbsp jalapeños (Chopped; for the spicy garlic dip.)
  • 1 tbsp Sambal oelek sauce (Alternatively, use any chili sauce plus 1/2 tbsp red chili flakes.)
  • 1 tbsp fresh garlic (Finely minced; for the spicy garlic dip.)
  • salt (To taste, for the spicy garlic dip.)
  • 1 tbsp black pepper (For the spicy garlic dip.)
  • 1 tbsp lemon juice (For the spicy garlic dip.)

Steps

  1. 1

Cut the potatoes lengthways into thick chip-size pieces. Trim the ends to give the fries a neat, square shape.

  2. 2

Parboil the cut potatoes in a pan of salted water for 7 minutes, until just tender.

  3. 3

Drain the potatoes and pat them dry.

  4. 4

In a mixing bowl, add the all-purpose flour, cornstarch, and salt. Mix to combine.

  5. 5

Sprinkle the flour mixture over the dried potatoes and toss or mix so the pieces are lightly coated.

  6. 6

Heat the frying oil over medium-low heat. Fry the chips in batches for about 5–7 minutes, or until they just begin to change color.

  7. 7

Remove the partially fried chips to a kitchen towel and let them drain for a few minutes.

  8. 8

Just before serving, return the chips to the hot oil for a second fry.

  9. 9

Fry the chips for 2–4 minutes, or until they turn nicely golden.

  10. 10

For the peri peri seasoning, measure the paprika, garlic powder, onion powder, dried parsley, oregano, cayenne, brown sugar, black pepper, and optional MSG into a pestle and mortar. Add salt to taste and mix well.

  11. 11

Transfer the mixed seasoning to a clean, dry storage jar and label it, ready to use in cooking.

  12. 12

Sprinkle 1/2 tsp of the peri peri seasoning over the freshly fried chips.

  13. 13

Combine the mayonnaise, chopped jalapeños, Sambal oelek, minced garlic, salt, black pepper, and lemon juice to make the spicy garlic dip. If substituting chili sauce, use it with 1/2 tbsp red chili flakes.

  14. 14

Serve the seasoned fries with the spicy garlic dip and enjoy.

Notes

The source does not specify the quantity of frying oil or the amount of salt. The source also does not state a specific frying temperature beyond medium-low heat for the first fry. Seasoning yield is not specified; only 1/2 tsp is used on the fries.
