Ingredients
- 1 medium carrot
- 1 medium head cauliflower
- 0.75 lb chicken breasts (Boneless and skinless)
- 1 egg
- 0.5 cup frozen peas
- 2 cloves garlic
- 1 1-inch piece ginger root
- 0.5 small bunch green onions (Scallions; slice into ¼-inch pieces)
- black pepper (Freshly ground, to taste)
- salt (To taste)
- soy sauce (Amount not specified)
- toasted sesame oil (For coating the skillet and adding more as needed; amount not specified)
Steps
- 1
Wash the cauliflower and cut off the leaves. Rice the cauliflower by grating it with a hand grater or processing it in a food processor.
- 2
Wash the carrot and green onions.
- 3
Trim the ends, peel, and finely dice the carrot. Transfer it to a medium bowl. Trim the ends of the green onions and slice them diagonally into ¼-inch pieces; transfer them to a small bowl.
- 4
Measure out the frozen peas and add them to the bowl with the carrot.
- 5
Peel and mince the garlic and ginger. Transfer both to a small bowl.
- 6
Heat a skillet over medium-high heat.
- 7
Cut the chicken into bite-sized cubes. Season with salt and freshly ground black pepper.
- 8
Coat the bottom of the hot skillet with toasted sesame oil. Add the chicken and stir-fry until browned, 3–4 minutes. Transfer the chicken to a plate.
- 9
Add more toasted sesame oil to the skillet, followed by the minced garlic and ginger. Stir-fry until fragrant, 15–30 seconds.
- 10
Add the diced carrot and peas. Stir-fry until tender-crisp, 3–4 minutes.
- 11
Add the cauliflower rice, mix well, and stir-fry until tender, 2–3 minutes.
- 12
In a small bowl, whisk the egg.
- 13
Move all the ingredients to one side of the skillet and pour the whisked egg into the empty side. Scramble the egg, then mix it with the other ingredients.
- 14
Return the chicken to the skillet. Add the soy sauce and green onions, then stir to combine.
- 15
Serve in bowls and enjoy.
Notes
The recipe specifies toasted sesame oil for cooking but does not provide an amount; add enough to coat the skillet and more as needed. The amount of soy sauce is also not specified.
