One-Pot Roasted Garlic Pasta
Creamy one-pot pasta with mellow, sweet roasted-garlic flavor achieved by frying and simmering the cloves rather than roasting them. Garlic-infused oil and cream emulsify with the starchy cooking water into a silky sauce.

Ingredients
- 25 Garlic cloves (From 2 garlic heads, peeled; set aside 1 clove for later and cook the rest)
- 0.333 cup Extra-virgin olive oil
- 2 tsp Salt (Plus more to taste)
- 1 lb Shells or cavatappi pasta (Use either shape)
- 5 cups Water
- 0.5 cup Heavy cream
Steps
- 1
Set aside one peeled garlic clove for later. Place a sieve over a heatproof measuring cup so it is ready to catch the garlic and oil.
- 2
In a medium 3- to 4-quart pot over medium heat, combine the olive oil and the remaining peeled garlic cloves. When the oil begins to sizzle, reduce the heat to low.
- 3
Fry the garlic over low heat, stirring frequently and keeping the cloves moving in the oil. Occasionally baste them with the oil so they color evenly; cook for about 8 minutes, until golden-brown on the outside.
- 4
Pour the garlic and oil through the prepared sieve into the heatproof measuring cup. Reserve the garlic-infused oil, and return the fried garlic to the pot.
- 5
Add 5 cups of water and 2 teaspoons of salt to the pot with the fried garlic. Bring to a boil over high heat, then boil for 5 minutes.
- 6
Use a slotted spoon to transfer the softened garlic to a cutting board. Carefully crush the cloves with the back of a knife until they form a fine paste.
- 7
Add the pasta and garlic paste to the boiling water. Cook over high heat, stirring frequently, until the pasta is al dente—often about 3 minutes less than the package directs—and the water has reduced by about half.
- 8
Finely grate the reserved raw garlic clove.
- 9
Add the grated garlic, reserved garlic-infused oil, and heavy cream to the pot. Mix until the liquid emulsifies into a thin, brothy sauce and the pasta is cooked through.
- 10
Taste and add more salt as needed. Let the pasta rest for a minute or two; the sauce will thicken as it stands.
