Ingredients
- Chicken breasts (Cut into strips)
- All-purpose flour
- Garlic powder
- Salt (To taste; listed with black pepper)
- Black pepper (To taste; listed with salt)
- Eggs (Whisked)
- Cornflakes (Crushed fairly well; panko breadcrumbs are an alternative)
- Dried parsley (Optional; mix into the cornflakes)
- Olive oil cooking spray (For coating the rack and lightly spraying the chicken tops)
- Greek yogurt (For the honey mustard sauce)
- Light mayonnaise (For the honey mustard sauce)
- Honey (Adjust to taste in the sauce)
- Mustard (Adjust to taste in the sauce)
Steps
- 1
Heat the oven to 400°F (200°C). Set a wire cooling rack over a baking sheet.
- 2
Lightly coat the rack with olive oil cooking spray so the chicken will not stick.
- 3
Set out three shallow dishes. In the first, mix the flour, garlic powder, salt, and black pepper.
- 4
Whisk the eggs in the second dish.
- 5
Put the crushed cornflakes in the third dish. If using dried parsley, mix it into the cornflakes.
- 6
Working with one chicken strip at a time, coat it in the seasoned flour, dip it in the beaten eggs, then press it into the cornflakes so both sides are covered.
- 7
Arrange the coated strips on the prepared rack, leaving a little space around each one.
- 8
Lightly spray the tops of the strips with olive oil cooking spray to help the coating brown and crisp.
- 9
Bake for about 15–20 minutes, depending on the thickness of the strips, until the coating is golden and the thickest piece reaches an internal temperature of 165°F (74°C). Avoid overcooking, which can dry out the chicken.
- 10
While the chicken bakes, mix the Greek yogurt, light mayonnaise, honey, and mustard to make a creamy sauce. Adjust the honey and mustard until the balance tastes right to you.
- 11
Serve the chicken hot with the honey mustard sauce on the side. Barbecue sauce or ranch dressing can be used instead if preferred.
