Ingredients
- 1 cup Plain Greek yogurt
- 1 cup Cream cheese
- 2 Eggs
- 0.5 cup Almond flour
- 0.5 tsp Baking soda
- 0.5 tsp Salt
- 1 tsp Baking powder
- Oil or butter for greasing (Use enough to grease the loaf pan.)
Steps
- 1
Preheat the oven to 180 °C (350 °F). Grease a loaf pan with a small amount of oil or butter and set it aside.
- 2
Place the Greek yogurt and cream cheese in a large bowl. Mix until completely smooth and homogeneous.
- 3
Add the eggs to the yogurt and cream cheese mixture. Beat or mix until the eggs are well incorporated and the mixture is uniform.
- 4
In another bowl, add the almond flour, baking soda, salt, and baking powder. Mix the dry ingredients to distribute the leavening agents and salt evenly.
- 5
Add the dry ingredients to the wet mixture. Mix just until everything is well combined and no dry areas remain; avoid overmixing.
- 6
Pour the batter into the prepared loaf pan. Smooth the surface with a spatula so the bread bakes evenly.
- 7
Bake for 30 to 35 minutes, until the surface is set and a toothpick inserted into the center comes out clean or with a few moist crumbs, but no wet batter.
- 8
Remove the pan from the oven and let the bread cool in the pan for a few minutes before removing it.
- 9
Carefully remove the bread from the pan, cut it into 8 slices, and serve.
