Ingredients
- 200 g unsweetened Greek yogurt
- 100 g shredded dried coconut (plus extra for garnish)
- 1 tbsp honey
- 100 g semi-sweet chocolate
- 100 g heavy cream
Steps
- 1
In a medium bowl, place 200 grams of unsweetened Greek yogurt.
- 2
Add 100 grams of shredded dried coconut and 1 tablespoon of honey to the yogurt.
- 3
Mix everything very well until fully combined and the mixture is thick.
- 4
Line two dessert glasses with plastic wrap, ensuring enough overhang to cover the tops later.
- 5
Divide the coconut cream mixture evenly between the two prepared dessert glasses.
- 6
Cover the tops with more plastic wrap and place them in the refrigerator to chill for at least one hour.
- 7
While the coconut base is chilling, prepare the ganache by adding 100 grams of semi-sweet chocolate to a medium bowl.
- 8
Microwave the chocolate on maximum power in 30-second intervals, stirring after each interval, until completely melted.
- 9
Add 100 grams of heavy cream to the melted chocolate and mix until a smooth, combined ganache forms.
- 10
Once the coconut dessert has chilled and set, remove them from the refrigerator and unmold them from the dessert glasses by lifting the plastic wrap.
- 11
Place the coconut molds on serving plates, pour the prepared chocolate ganache over the top, and finish with shredded coconut to taste.
Notes
For the best results, ensure the Greek yogurt is thick and well-strained. If the ganache is too thick, you can warm it slightly before pouring.
