Ingredients

  • 4 tbsp soy sauce
  • 4 tbsp cooking sake (Optional)
  • 1.5 tbsp vinegar (Source states 1–2 tbsp; fruit vinegars are recommended. Quantity represented as the midpoint of the stated range.)
  • 2 tbsp sesame oil
  • 2 tbsp sugar (The creator used monkfruit sweetener instead.)
  • 1.5 tbsp chili flakes or gochugaru (Source states 1–2 tbsp; quantity represented as the midpoint of the stated range.)
  • 5.5 roasted seaweed packets (Source states 5–6 packets; quantity represented as the midpoint. Packet size is not specified.)
  • 1.5 tbsp roasted sesame seeds (Source states 1–2 tbsp; quantity represented as the midpoint of the stated range.)
  • frozen prawns (Chopped into a mince; amount not stated in the source.)
  • garlic (Minced; amount not stated in the source.)
  • soba noodles (Amount not stated in the source.)

Steps

  1. 1

Combine the roasted seaweed packets and roasted sesame seeds. Blend or crush them until the seaweed is broken up and the mixture is well combined. Reserve some of this seasoning for topping.

  2. 2

Stir together the soy sauce, optional cooking sake, vinegar, sesame oil, sugar or monkfruit sweetener, and chili flakes or gochugaru until the sauce is well mixed.

  3. 3

Chop the frozen prawns into a mince and add them to a frying pan with the minced garlic. Fry until the prawns are cooked through, then transfer them to a separate plate.

  4. 4

Add some of the prepared sauce and some of the seaweed-sesame seasoning to the cooked minced prawns. Mix well to coat.

  5. 5

Boil the soba noodles according to the package directions. Drain them and add them to the bowl containing the remaining sauce, mixing until coated.

  6. 6

Top the soba with the remaining seaweed seasoning and serve with the seasoned minced prawns.

Notes

The source does not specify the amounts of prawns, garlic, or soba noodles, nor the exact noodle-boiling time. The creator says the dish may taste even better cold after resting overnight in the refrigerator. A transcript phrase referring to topping with “rice” appears inconsistent with the rest of the recipe and is not included as a separate ingredient.
