Ingredients

  • 1 crown broccoli
  • 8 oz cheddar cheese (Coarsely grated)
  • 0.75 lb chicken breasts, boneless skinless
  • 0.75 lb sweet potato
  • 0.25 tsp black pepper (For the coating and seasoning)
  • 4 tsp extra virgin olive oil (Divided for the baking sheet, chicken, broccoli, and mashed sweet potatoes)
  • 0.25 tsp garlic powder (For the coating)
  • 1 tbsp mayonnaise (For coating the chicken)
  • 0.25 tsp onion powder (For the coating)
  • 0.5 cup panko bread crumbs (For the coating)
  • 0.25 tsp paprika (For the coating)
  • 0.5 tsp salt (For the coating, broccoli, and mashed sweet potatoes)

Steps

  1. 1

Preheat the oven to 425°F. Line a baking sheet with aluminum foil for easier cleanup, if desired, then coat the sheet with oil.

  2. 2

Coarsely grate the cheddar into a medium bowl. Add the panko bread crumbs, paprika, garlic powder, onion powder, salt, and black pepper, then stir to combine the coating.

  3. 3

Pat the chicken dry with paper towels and place it on a cutting board. Holding a knife parallel to the cutting board, cut each breast in half horizontally to form thin cutlets.

  4. 4

Spread mayonnaise over both sides of the chicken cutlets. Dredge the cutlets in the bread crumb coating, pressing firmly so it adheres. Transfer the cutlets to one side of the prepared baking sheet and drizzle with oil.

  5. 5

Wash and dry the broccoli. Using a clean cutting board, separate it into bite-sized florets and cut the stems into smaller pieces. Add the broccoli to the other side of the baking sheet.

  6. 6

Drizzle the broccoli with oil, season it with salt and black pepper, and toss to coat. Spread it out in an even layer.

  7. 7

Place the baking sheet in the oven; it does not have to be fully heated. Bake for 15–18 minutes, flipping the chicken and tossing the broccoli halfway through, until the chicken is cooked through. Remove the baking sheet from the oven.

  8. 8

Meanwhile, wash, dry, peel, and medium-dice the sweet potato. Place it in a medium saucepan, cover with hot tap water, and bring the water to a boil over high heat.

  9. 9

Once the water is boiling, reduce the heat to medium, cover the saucepan, and simmer for about 10 minutes, until the sweet potatoes are tender.

  10. 10

Drain the sweet potatoes in a colander and return them to the saucepan. Add oil, salt, and black pepper, then mash until smooth.

  11. 11

Divide the mashed sweet potatoes, cheddar-crusted chicken, and roasted broccoli between plates. Serve and enjoy.

Notes

The structured recipe lists 4 teaspoons total olive oil and 1/2 teaspoon total salt; divide them among the baking sheet, chicken, broccoli, and mashed sweet potatoes as directed. The oven may still be finishing preheating when the baking sheet goes in.
