Ingredients
- 1 cup Honey
- 2 tsp Gelatin
- 0.1667 cup Warm water for gelatin (Half of ⅓ cup; warm water used to mix with the gelatin.)
- 6 g Matcha powder (Sieved.)
- 50 ml Water for matcha (Use 15 ml room-temperature water to make the paste and 35 ml hot water; water should be below 80°C.)
- 100 ml Milk (Milk of choice.)
Steps
- 1
Mix the gelatin with the warm water until combined.
- 2
Add the gelatin mixture to the honey and whip all of the honey-cloud ingredients on high speed for about 10–20 minutes, until thick and cloud-like.
- 3
Scoop the whipped honey cream directly with a spoon, or transfer it into a piping bag for easier piping.
- 4
Sieve the matcha powder into a bowl or cup.
- 5
Add 15 ml of room-temperature water to the matcha and whisk to form a smooth paste.
- 6
Add the remaining 35 ml of hot water, keeping the water below 80°C, and whisk until the matcha is fully dissolved.
- 7
Add 100 ml of milk of choice to the dissolved matcha.
- 8
Pour the matcha latte into a cup.
- 9
Spoon or pipe the whipped honey cream on top of the matcha.
Notes
The source does not specify whether the finished latte is served hot or iced. The honey cream quantity is substantially larger than the amount needed for one topping, so extra cream may remain.
