Ingredients
- 3 eggs
- 2 tbsp sugar
- 0.25 tsp salt
- 250 ml milk (divided)
- 200 g flour
- 2 tbsp vegetable oil
- Nutella (for filling)
Steps
- 1
In a large mixing bowl, combine 3 eggs, 2 tablespoons of sugar, and 1/4 teaspoon of salt.
- 2
Pour in approximately half of the milk (250 ml) and whisk until the mixture is well combined.
- 3
Add 200 g of flour to the bowl and whisk until a smooth, thick paste forms with no lumps.
- 4
Gradually whisk in the remaining 250 ml of milk and 2 tablespoons of oil until the batter is thin and smooth.
- 5
Heat a non-stick skillet or crepe pan over medium heat. Lightly grease if necessary.
- 6
Pour a small ladle of batter into the center of the pan and swirl immediately to coat the bottom in a thin, even layer.
- 7
Cook for 1-2 minutes until the edges begin to lift and the bottom is lightly golden. Flip and cook the other side for about 30-60 seconds.
- 8
Spread a generous layer of Nutella over half of the warm crepe.
- 9
Fold the crepe in half, then in half again to form a triangle, and serve immediately.
Notes
For best results, let the batter rest for 15-30 minutes before cooking to allow the gluten to relax. You can substitute the oil with melted butter for a richer flavor.
