Ingredients
- 3 tbsp TINE Meierismør (butter), for the batter (Melted; lactose-free butter may be used for a lactose-free version.)
- 3 dl Wheat flour
- 0.5 tsp Salt (Optional; may be omitted.)
- 6 dl TINE Lettmelk 1.0% (low-fat milk) (Lactose-free low-fat milk may be used for a lactose-free version.)
- 3 Eggs (Preferably at room temperature.)
- 3 tbsp TINE Meierismør (butter), for frying (Lactose-free butter may be used for a lactose-free version; use a little at a time as needed for frying.)
- 2 dl Blueberry jam (Suggested serving accompaniment.)
Steps
- 1
Melt the butter for the batter in a small saucepan, then let it cool slightly.
- 2
Combine the flour and salt in a bowl. Add about half of the milk and whisk until the batter is thick and smooth, with no lumps.
- 3
Add the melted butter to the batter and mix it in.
- 4
Gradually whisk in the remaining milk, a little at a time.
- 5
Stir in the eggs until the batter is thin and smooth.
- 6
Leave the batter to rest for at least 20 minutes before frying.
- 7
Heat a frying pan over medium-high heat and melt a little of the butter for frying in it.
- 8
Use a ladle or jug to pour in enough batter to just cover the bottom of the pan. Tilt and rotate the pan to spread the batter evenly.
- 9
Cook the pancake for 1–2 minutes, or until the top has set. Turn it over and cook for about the same length of time on the other side.
- 10
Transfer the cooked pancakes to a plate and stack them to help keep them warm. Repeat with the remaining batter, adding a little more butter to the pan as needed.
- 11
Serve warm with blueberry jam, for example.
Notes
The recipe makes about 12 pancakes. For a coarser version, replace some of the wheat flour with the same amount of coarse whole-wheat flour. The batter keeps in the refrigerator for at least 2–3 days and can be frozen; it may be thawed in a microwave. The author suggests jam, sugar, bacon, or brown cheese as topping options.
