Weights are estimates. Together, the ingredients weigh about 475 g before cooking, which is about 60 g per serving.

Steps

  1. Place the drained and rinsed black beans and pitted dates into a food processor.

  2. Add the oat flour, protein powder, cocoa powder, grated ginger, and cinnamon to the food processor.

  3. Pulse the mixture until it starts to come together. If the mixture is too dry or crumbly, add water one tablespoon at a time and blend until a thick, moldable dough forms.

  4. Line a small square container or baking dish with parchment paper.

  5. Transfer the mixture into the container and press down firmly and evenly with a spatula or the back of a spoon to form a flat layer.

  6. Place the container in the freezer for about 30 minutes to firm up before slicing into 8 bars.

Notes

These bars are best stored in the refrigerator or freezer. You can customize the flavor by using different protein powder flavors or adding nuts/seeds for texture.
