Ingredients
- 3 tbsp butter (softened; for the cinnamon filling)
- 2 tbsp brown sugar (for the cinnamon filling)
- 1.5 tsp ground cinnamon (for the cinnamon filling)
- 5 slices bread (Source gives a range of 4–6 slices; use 4–6 slices. Sandwiches use two slices each.)
- 2 eggs
- 0.25 cup milk (for the egg mixture)
- 1 tsp vanilla extract (for the egg mixture)
- 1 tbsp sugar (for the egg mixture)
- 0.5 tsp cinnamon (for the egg mixture)
- butter (for frying; source says “a little”)
- 0.5 cup icing sugar (for the icing)
- 1.5 tbsp milk (for the icing; source gives a range of 1–2 tbsp)
- 0.25 tsp vanilla extract (for the icing)
Steps
- 1
Make the cinnamon filling: mix the softened butter, brown sugar, and ground cinnamon into a smooth paste.
- 2
Spread the cinnamon butter over one slice of bread, then cover it with another slice. Gently press the edges together and repeat with the remaining bread to make sandwiches.
- 3
In a bowl, whisk together the eggs, milk, vanilla extract, sugar, and cinnamon to make the egg mixture.
- 4
Quickly dip each sandwich on both sides in the egg mixture, taking care not to soak it too much.
- 5
Melt a little butter in a pan over medium-low heat.
- 6
Fry the sandwiches for about 3–4 minutes per side, until golden brown and the filling is melted.
- 7
Mix the icing sugar, milk, and vanilla extract until smooth.
- 8
Drizzle the icing over the warm sandwiches and serve.
Notes
The source specifies 4–6 bread slices and 1–2 tbsp milk for the icing. Sandwiches require two slices apiece, so the number of complete sandwiches depends on the amount of bread used.
