Ingredients
- 1.5 cup blueberries (fresh or frozen)
- 2.5 tbsp sugar (adjust to taste (2-3 tbsp))
- 1 tbsp lemon juice (for topping)
- 1 tsp cornstarch (optional, for thicker sauce)
- 1 tbsp water (optional, to mix with cornstarch)
- 8 oz cream cheese (softened)
- 0.25 cup powdered sugar
- 1 tsp vanilla extract (for filling)
- 0.5 lemon zest (zest of 1/2 lemon)
- 1 tsp lemon juice (for filling)
- 4 brioche bread (slices)
- 2 eggs (large)
- 0.5 cup milk (or half-and-half for extra richness)
- 1 tsp vanilla extract (for custard)
- 1 tsp cinnamon
- 0.25 tsp nutmeg (optional)
- salt (pinch)
- butter (for the pan)
Steps
- 1
Prepare the blueberry topping by combining 1 1/2 cups blueberries, 2-3 tablespoons sugar, and 1 tablespoon lemon juice in a small saucepan over medium heat.
- 2
If a thicker sauce is desired, whisk 1 teaspoon cornstarch with 1 tablespoon water and stir it into the blueberry mixture. Simmer until the berries burst and the sauce thickens, then set aside.
- 3
In a medium bowl, combine 8 oz softened cream cheese, 1/4 cup powdered sugar, 1 teaspoon vanilla extract, the zest of 1/2 lemon, and 1 teaspoon lemon juice. Mix until smooth and creamy.
- 4
Prepare the French toast custard by whisking together 2 large eggs, 1/2 cup milk, 1 teaspoon vanilla extract, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, and a pinch of salt in a shallow dish.
- 5
Spread the cream cheese filling onto the brioche slices. You can either sandwich two slices together or spread it on top of thick-cut slices.
- 6
Dip the prepared bread into the egg mixture, ensuring both sides are well-coated.
- 7
Melt butter in a pan over medium heat. Place the bread in the pan and cook until golden brown on both sides.
- 8
Serve the French toast warm, topped generously with the prepared blueberry sauce.
Notes
For extra richness, use half-and-half instead of milk in the custard. Adjust the sugar in the blueberry topping based on the sweetness of your berries.
