Ingredients
- 27 ladyfingers (sticks)
- 2 cup freshly brewed Americano (must be cooled)
- 0.5 kg mascarpone (cold)
- 3 tbsp powdered sugar
- 0.25 ml 33% heavy cream (cold; the source specifies the quantity as 0.25 ml)
- cocoa powder (for dusting)
- raspberries or other berries (optional)
Steps
- 1
Cool the freshly brewed Americano before using.
- 2
Lay out a sheet of parchment paper. Very quickly dip each ladyfinger into the cooled Americano so that the biscuits become infused but do not become soggy.
- 3
Arrange the soaked ladyfingers on the parchment paper.
- 4
Place the cold mascarpone in a bowl and mix it with the powdered sugar using an electric mixer at medium speed. Do not rush.
- 5
Pour in the cold cream and whip until you have a smooth, thick cream. Do not overwhip, or the mixture may separate.
- 6
Assemble the dessert according to the video instructions, using the soaked ladyfingers and cream. Add raspberries or other berries if desired.
- 7
Dust the dessert with cocoa powder.
- 8
Chill for several hours before serving.
Notes
The source lists the amount of cream as “0.25 ml”; this has been preserved without correction, although it is an unusual measurement for 33% cream. The exact log-assembly method shown in the video is unavailable, so the details of arranging the layers have not been reproduced.
