Weights are estimates. Together, the ingredients weigh about 875 g before cooking, which is about 220 g per serving.
Steps
Boil the potatoes until tender, then mash them thoroughly in a large mixing bowl until smooth.
Add the flour, chopped herbs, and a splash of milk to the mashed potatoes. Mix until a soft, pliable dough forms.
Cover the dough and let it rest for at least 30 minutes to allow the flour to hydrate and the dough to soften.
Divide the dough into equal portions. Roll each portion out into a flat circle.
Place a portion of shredded cheese and cooked meat in the center of each dough circle.
Fold the edges of the dough over the filling and seal tightly, then gently flatten into a pancake shape.
Heat oil in a pan over medium heat. Place the potato pancakes in the pan and fry until golden brown and crispy on both sides, and the cheese inside is melted.
Notes
The resting period is crucial for the dough's texture. You can customize the filling with different cheeses or vegetarian meat alternatives.
