Ingredients

  • 250 ml Egg whites
  • 35 g Peanut butter-flavored protein powder (Ghost WPI Peanut Butter was used.)
  • 1 tsp Monk fruit sweetener (For the bites.)
  • 0.5 tsp Ground cinnamon (For the bites.)
  • 1 tsp Vanilla extract (For the bites.)
  • 15 g Salted butter (Melted; for the frosting.)
  • 30 g Light cream cheese (For the frosting.)
  • 1 tsp Vanilla extract (For the frosting.)
  • 0.5 tsp Monk fruit sweetener (For the frosting.)
  • 0.5 tsp Cinnamon sugar (Approximately 2–3 g; for the frosting.)
  • Cinnamon sugar (Extra, to taste, as an optional topping.)
  • 15 g Crunchy Biscoff cookie spread (Melted; suggested optional topping.)
  • Banana (Suggested optional topping; amount to taste.)
  • Maple syrup (Suggested optional topping; amount to taste.)

Steps

  1. 1

Preheat the oven to 180 °C. In a bowl, whisk the egg whites until white and fluffy and stiff peaks form.

  2. 2

Add the sweetener and cinnamon to the egg whites, and whisk to combine.

  3. 3

Add the protein powder and whisk again until incorporated.

  4. 4

Add the vanilla extract and mix it into the batter.

  5. 5

Divide the mixture into 12 portions on a nonstick baking sheet.

  6. 6

    Bake for 10–12 minutes.

  7. 7

While the bites are baking, mix the melted butter, cream cheese, vanilla extract, sweetener, and cinnamon sugar until smooth.

  8. 8

Add the frosting to the bites. Customize the toppings: extra cinnamon sugar and 15 g melted crunchy Biscoff spread are suggested; banana, maple syrup, and cinnamon sugar are also options.
