Quick and Easy Savoury Rice with Poached Eggs

Ingredients
- 2 tbsp Cooking oil (for sautéing)
- 1 Onion (finely chopped)
- 1 cup Bell peppers (mixed colors (red, green, yellow), diced)
- 1 cup Mixed vegetables (frozen peas, carrots, and corn)
- 2 cup White rice (cooked)
- 1 tbsp Savoury rice seasoning (or spice for rice)
- Salt (to taste)
- Black pepper (to taste)
- 4 Eggs (large)
- 0.25 cup Water (for cooking the eggs)

Heat the cooking oil in a large skillet or pan over medium heat.

Add the chopped onions and diced bell peppers to the pan and sauté until the onions are translucent and the peppers begin to soften.

Stir in the mixed vegetables (peas, carrots, and corn) and cook for 3-4 minutes until heated through.

Add the cooked white rice to the pan, breaking up any clumps with a spoon.

Season the rice with savoury rice spice, salt, and black pepper. Toss everything together thoroughly until the rice is evenly coated and heated through.

In a separate non-stick frying pan, add about a quarter cup of water and bring to a gentle simmer over medium heat.

Carefully crack the eggs into the simmering water. Cover the pan with a lid and let the eggs steam-cook until the whites are set but the yolks remain soft.

Portion the savoury rice into bowls and top each serving with a water-cooked egg.
Notes
The author mentions that because the rice already contains oil, cooking the eggs in water (steam-poaching in a pan) is a healthier way to complete the meal. Adding avocado on the side is highly recommended for a complete meal.
