Ingredients

  • 500 g Flour
  • 7 g Instant dry yeast
  • 250 ml Milk (Lukewarm)
  • 60 g Sugar
  • 100 g Brown butter (Melted and cooled to room temperature)
  • 1 g Egg (Whole)
  • 1 Egg yolk
  • 1 tsp Vanilla (For the dough)
  • 0.5 tsp Salt (For the dough)
  • 2 Black tea bags (For infusing the milk)
  • 1 tsp Chai latte spice mix (For the dough; a blend of cinnamon, cloves, cardamom, and ginger)
  • 1 Star anise (For the infusion; remove before using)
  • 150 g Soft butter (For the filling)
  • 130 g Brown sugar (For the filling)
  • 1 tbsp Cinnamon (For the filling)
  • 1 tsp Vanilla (For the filling)
  • Salt (A pinch, for the filling)
  • 150 g Heavy cream (Pour over the rolls just before baking)
  • 300 g Philadelphia cream cheese (For the frosting)
  • 80 g Soft butter (For the frosting)
  • 70 g Powdered sugar (For the frosting)
  • 2 tsp Chai latte spice mix (For the frosting)
  • Salt (A small pinch, for the frosting)
  • Cinnamon (For sprinkling on top)

Steps

  1. 1

Add the chai latte spice mix and star anise to the milk and leave to infuse overnight.

  2. 2

The next day, remove the star anise and heat the infused milk. Add the black tea bags and steep for 5 minutes.

  3. 3

Melt the butter for the dough over low heat for a few minutes, until golden brown. Let it cool to room temperature.

  4. 4

Mix the flour, yeast, sugar, and salt for the dough.

  5. 5

Add the infused milk, egg, egg yolk, vanilla, and cooled brown butter. Knead for approximately 10 minutes, until you have a soft, elastic dough.

  6. 6

Cover the dough and let it rise for 60–90 minutes, until doubled in volume.

  7. 7

For the filling, mix the soft butter, brown sugar, cinnamon, vanilla, and pinch of salt.

  8. 8

Roll the risen dough into a rectangle and spread the butter and brown sugar filling evenly over it.

  9. 9

Roll the dough tightly and cut it into 10–12 rolls.

  10. 10

Arrange the rolls in a baking pan and let them rise for another 30–40 minutes.

  11. 11

Just before baking, pour the heavy cream over the rolls.

  12. 12

Bake the rolls at 180°C for 25 minutes. Do not overbake them.

  13. 13

For the frosting, beat the soft butter with the powdered sugar, then add the Philadelphia cream cheese, chai latte spice mix, and small pinch of salt.

  14. 14

Spread the frosting over the hot rolls and sprinkle a little cinnamon on top.
