Ingredients

  • 600 g Zucchini or courgettes (Chop before blending)
  • 4 Eggs
  • 210 g Sugar
  • 330 g Flour (Sift)
  • 20 g Baking powder
  • 70 g Cocoa powder
  • Salt (A pinch, to taste)
  • 100 g Butter (Melt; the author substitutes 100 g of butter with 70 g of oil)
  • 70 g Vegetable oil (Alternative to butter)
  • 120 g Dark chocolate (For the topping, melted)
  • 30 g Milk (For the chocolate topping)
  • Blackberries (For decoration; quantity to taste)
  • 100 g Powdered sugar (For the alternative frosting)
  • 20 g Cocoa powder (For the alternative frosting; approximately 2 heaped tbsp)
  • 10 g Cornstarch (For the alternative frosting; approximately 1 level tbsp)
  • 50 ml Cold or iced water (For the alternative frosting)
  • Other fruits or berries (To taste; the author also recommends blueberries)

Steps

  1. 1

Cut the zucchini or courgettes into pieces. Transfer them to a blender with the eggs and blend until smooth.

  2. 2

Add the sugar and a pinch of salt to the zucchini-and-egg mixture.

  3. 3

In a separate bowl, combine the flour, baking powder, and cocoa powder. Gradually sift the dry mixture into the zucchini mixture, stirring as you go.

  4. 4

Finally, add the vegetable oil or melted butter. Stir the batter; if needed, add another pinch of salt.

  5. 5

Bake the brownies at 180 °C for 40–50 minutes. Check for doneness with a dry toothpick.

  6. 6

    Allow the brownies to cool.

  7. 7

For the chocolate topping, melt the dark chocolate with the milk and spread it over the cooled brownies.

  8. 8

Alternatively, prepare the frosting: first mix the powdered sugar, cocoa powder, and cornstarch, then gradually add the iced water while stirring.

  9. 9

Decorate the brownies with blackberries or other fruits or berries to taste. Blueberries can be used instead of blackberries.

Notes

For the topping, use either chocolate with milk or the alternative cold frosting. The source does not specify the pan size or how to prepare the pan.
