Ingredients

  • 6 Apples (Sliced)
  • 0.75 cup Brown sugar (For the apples)
  • 1 tsp Vanilla (For the apples)
  • 2 tsp Ground cinnamon (For the apples)
  • 1 tbsp Golden syrup (For the apples)
  • 1 cup All-purpose flour (For the crumble)
  • 1 cup Oats (For the crumble)
  • 0.6667 cup Brown sugar (For the crumble)
  • 150 g Butter (Very cold; for the crumble)
  • 2 Egg yolks (For the crème anglaise)
  • 250 ml Milk (For the crème anglaise)
  • 0.25 cup Sugar (For the crème anglaise)
  • 1 tsp Vanilla (For the crème anglaise)

Steps

  1. 1

    Slice the apples.

  2. 2

Cook the apples over low heat with the brown sugar, vanilla, cinnamon, and golden syrup until softened. Set the apples aside.

  3. 3

Preheat the oven to 200 °C and prepare a 20 × 20 cm square baking dish.

  4. 4

In a bowl, combine the flour, oats, brown sugar, and very cold butter.

  5. 5

Work the mixture with your fingertips until it has an uneven, crumbly texture.

  6. 6

Spread the cooked apples over the square baking dish.

  7. 7

Scatter the crumble mixture over the top.

  8. 8

Bake at 200 °C until the crumble is golden brown.

  9. 9

To prepare the crème anglaise, whisk the egg yolks with the sugar.

  10. 10

Heat the milk with the vanilla.

  11. 11

Gradually pour the hot milk into the egg yolks in a thin stream, whisking constantly to prevent the mixture from curdling.

  12. 12

Return the mixture to the saucepan and cook until just before it boils.

  13. 13

Cool the crème anglaise in an inverted bain-marie.

  14. 14

Serve the crumble warm and finish with a little crème anglaise.

Notes

The source does not specify the exact baking time; bake until the surface is golden brown. The crème anglaise must be cooked just before boiling to prevent it from curdling.
