Ingredients

  • 300 g Jasmine rice
  • 320 ml Water (For the rice cooker)
  • 3 g Kombu (May be replaced with 1.5 g MSG)
  • 3 tbsp Soy sauce
  • 1 tbsp Sake
  • 0.5 tbsp Sugar
  • 0.25 tsp Salt
  • 0.5 tsp Ginger
  • 150 g Frozen onion
  • 300 g Thin-sliced beef (Sliced pork belly may also be used)
  • Hot water (For cooking the egg)
  • Vinegar (The source shows cheap vinegar; for the egg-cooking water)
  • 3 Eggs (Use 3–4 eggs; prepare shortly before serving)
  • 30 g Green onion leaves (Sliced or chopped)
  • 15 g Unsalted butter
  • Black pepper (To taste)
  • Salt (1 pinch, for the egg-cooking water)

Steps

  1. 1

Place the jasmine rice and 320 ml water in the rice cooker. Add the kombu, soy sauce, sake, sugar, salt, ginger, frozen onion, and thin-sliced beef. Flatten the ingredients over the rice, but do not mix them into the rice; mixing can cause the rice to remain undercooked in some rice cookers.

  2. 2

Select the regular White Rice mode and start the rice cooker. The source indicates that the cooking cycle takes about 40 minutes.

  3. 3

When the rice cooker finishes, leave the cooker on Keep Warm with the lid closed for at least 10 minutes before opening it so the contents finish cooking completely.

  4. 4

While the rice cooks or during the 10-minute keep-warm period, prepare the egg topping. Heat hot water with vinegar and a pinch of salt, then add 3–4 eggs.

  5. 5

Cook the eggs for 2–3 minutes while adjusting the heat to maintain a light simmer. Do not let the water boil hard. The eggs should be firm on the outside while retaining a soft yolk.

  6. 6

If the eggs will not be eaten soon, cool them in cold water to help keep the yolks runny. Reserve the egg-cooking water; the eggs can be quickly reheated in it immediately before eating.

  7. 7

Open the rice cooker and finish the cooked beef rice with the unsalted butter, green onion leaves, and black pepper. Serve with the soft-boiled egg on top.

Notes

The source does not specify an exact amount of vinegar or hot water for cooking the eggs. It recommends omitting the egg if the dish will be carried outside for a long time, and notes that the rice is suitable for meal prep. The caramelized browned rice at the bottom is especially flavorful. The source also says sliced pork belly can be substituted for the beef.
