Ingredients

  • 6 Rice paper (sheets)
  • 2 Eggs (whisked)
  • 1.5 Bananas (cut into fourths)
  • 2.5 tbsp Cinnamon
  • 2 tbsp Dark chocolate chips
  • 1 tbsp Powdered sugar (for topping)
  • Spray oil (1/3 second spray)

Steps

    Preheat your oven to 425 degrees Fahrenheit (220°C).

    In a bowl, whisk your eggs until well combined.

    Cut your bananas in half crosswise, then take each half piece and cut it lengthwise into fourths to get long wedges.

    Dip a sheet of rice paper into the whisked eggs until fully coated.

    Place the wet rice paper onto a piece of parchment paper that has been coated with a spray of oil.

    Place a fourth piece of banana on the rice paper, then coat it with approximately one-sixth of your cinnamon and one-sixth of your chocolate chips.

    Fold the rice paper like a burrito to fully encase the banana and chocolate chips.

    Repeat the dipping, filling, and folding process for the remaining 5 sheets of rice paper.

    Coat the top of all the croissants with a quick spray of oil.

    Place in the oven and cook for 8-10 minutes, or until the rice paper is crispy and brown.

    Once cooked, remove from the oven, top with powdered sugar, and enjoy.

Notes

These are best served immediately while the rice paper is at its crispiest. The recipe makes 6 small croissants total, which constitutes 2 servings.
