Ingredients

  • 2 cups bread flour
  • 0.5 cup warm water (Warm; no temperature specified.)
  • 0.333 cup plain full-fat yogurt
  • 1 tsp instant yeast
  • 2 tsp sugar
  • 0.75 tsp salt
  • 30 g unsalted butter (Melted and cooled; alternatively use 2 tbsp (30 g) neutral oil.)
  • 30 g neutral oil (Alternative to the unsalted butter; listed as 2 tbsp (30 g).)
  • melted butter or garlic butter (For brushing; amount not specified.)
  • chopped parsley or cilantro (Optional garnish; amount not specified.)

Steps

  1. 1

In a bowl, mix the warm water, yogurt, sugar, instant yeast, and melted butter. Make sure the butter has cooled completely before adding it; hot butter can kill the yeast and prevent the dough from rising.

  2. 2

Add the bread flour and salt, then mix everything together.

  3. 3

Knead the dough by hand or in a stand mixer. It does not need to be perfectly smooth at this stage.

  4. 4

Lightly oil a bowl and place the dough in it. Cover and let it rise for about 1 hour, or until doubled in size.

  5. 5

Once doubled, gently stretch the dough. It should be smoother and less sticky. Transfer it to a work surface and divide it into 6 equal pieces.

  6. 6

Shape each piece into a dough ball and let the balls rest for 15–20 minutes to relax the gluten.

  7. 7

Roll each dough ball into a circle or oval. Before rolling, start heating a pan; it needs to be very hot for cooking the naan.

  8. 8

Place one rolled piece of dough on the hot pan and cook for about 2 minutes, until lots of bubbles appear.

  9. 9

Flip the naan and cook for another 1–2 minutes.

  10. 10

As each naan comes off the pan, transfer it to a plate and cover it with a clean kitchen towel.

  11. 11

While the naan is still hot, brush it generously with melted butter or garlic butter. Add chopped parsley or cilantro if desired.

Notes

The transcript says the recipe makes 6 medium naans or 4 large naans. The quantity of oil for greasing the rising bowl and the amount of butter or optional herbs for finishing are not specified. Pan temperature is described only as very hot; no specific temperature is given.
