Weights are estimates. Together, the ingredients weigh about 910 g before cooking, which is about 70 g per serving.
Steps
In a large bowl, whisk together the lukewarm milk (38°C (100 °F)), lukewarm water, 30g sugar, and 7g instant yeast.
Add 500g of flour and 8g of salt to the liquid mixture and mix well until combined.
Using a spatula, fold the dough over itself while turning the bowl. Repeat this 10-20 times until the dough looks softer and has come together. You may also use a mixer or knead by hand, but it is not necessary.
Cover the bowl and let the dough rest for 1 hour.
After resting, flour your hand and decompress the sticky dough, pulling it away from the edges of the bowl.
Place the dough onto a well-floured surface and shape it into a rough rectangle.
Cut the dough into 13 equal pieces (a good method is to cut down the middle and then cut each side into 6 pieces).
Flour the surface and the top of each dough piece. Roll each piece out a few times lengthways and sideways until it is approximately 2-3mm thick.
Brush the inside of the rolled-out dough with olive oil and fold it over.
Place the folded pieces on a dish lined with parchment paper that has been lightly brushed with oil.
Cover and let the dough rest for 20 minutes. While resting, preheat your oven to 180°C (350 °F) (350°F (180 °C)).
Bake at 180°C (350 °F) for 7 minutes, then turn the oven down to 170°C (350 °F) (340°F (170 °C)) and bake for another 5-8 minutes depending on your oven.
Notes
STORAGE: Keep airtight at room temperature as soon as they cool for 2-3 days. FREEZING: These freeze incredibly well. Freeze as soon as they are cool in an airtight zip lock bag. To defrost, take out what you need and defrost while still in an airtight container to maintain freshness.
