Ingredients
- 500 g Delica pumpkin (Already cleaned)
- 1 Egg
- 50 g Breadcrumbs (If necessary, add a little at a time to make the mixture workable)
- 20 g Grated Parmigiano Reggiano
- 20 g Grated Pecorino
- Salt (To taste)
- Pepper (To taste)
- Garlic (To taste)
- Extra-virgin olive oil (As needed, to finish the meatballs before baking)
Steps
- 1
Preheat the fan oven to 180°C. Cut the pumpkin into pieces and arrange it on a baking tray.
- 2
Bake the pumpkin for about 15 minutes, or until tender.
- 3
Allow the pumpkin to cool slightly, then mash it with a fork.
- 4
Add the egg, breadcrumbs, Parmigiano, Pecorino, salt, pepper, and garlic. Mix until you have a smooth, workable mixture.
- 5
If the mixture is too soft, add breadcrumbs a little at a time until it reaches the desired consistency.
- 6
Shape the meatballs with your hands and arrange them on a baking tray lined with parchment paper.
- 7
Drizzle with extra-virgin olive oil.
- 8
Bake again in a fan oven at 180°C for about 30 minutes, until the meatballs are nicely golden.
Notes
The recipe makes approximately 10–12 meatballs and suggests adding more breadcrumbs a little at a time if the mixture is too soft.
