Ingredients

  • 300 g canned sweet corn (drained)
  • 1 shallot (finely chopped)
  • 2 spring onion (finely sliced)
  • 2 red chilies (finely sliced)
  • 3 kaffir lime leaves (finely sliced)
  • salt (to taste)
  • black pepper (to taste)
  • 100 g paneer cheese (crumbled)
  • 2.5 tbsp wheat flour (all-purpose flour)
  • 3 tbsp cornstarch (cornstarch)
  • 1 egg (large)
  • vegetable oil (for frying)
  • Chaat Masala (for garnish)
  • extra spring onion (for garnish)
  • extra red chili (for garnish)

Steps

    In a large bowl, mix the drained sweet corn, chopped shallot, red chili, kaffir lime leaves, salt, and pepper.

    Add the crumbled paneer cheese, wheat flour, cornstarch, and egg to the mixture.

    Incorporate all ingredients until well combined and let the mixture rest in the refrigerator for 10 minutes.

    While the mixture rests, heat oil in a skillet over medium-high heat.

    Place a tablespoon of the mixture into the hot oil, flattening it slightly to form a fritter.

    Fry for approximately 1 minute per side or until crispy and dark golden brown.

    Remove from the oil and immediately sprinkle with Chaat Masala.

    Garnish with extra red chili and sliced spring onion before serving.

Notes

Resting in the refrigerator is key for the flour and cornstarch to hydrate so the fritters don't fall apart during frying. If you can't find paneer, you can substitute it with a firm cheese that doesn't melt easily, such as queso canasta or firm queso fresco.
