Ingredients
- 1 large jicama (Cleaned, completely peeled, and spiralized into noodles)
- 2 tsp lime juice (For coating the jicama noodles)
- salt (A pinch, for seasoning the noodles)
- 1 cup raw cashews (Soaked for 1–2 hours, then drained)
- 0.667 cup spring water (Approximately 2/3 cup)
- 1 mango (Roughly chopped)
- 2 tbsp raw hemp seeds
- 1 tbsp raw agave
- 1 tbsp lime juice (For the mango cashew sauce)
- 0.25 cup onion (Diced)
- fresh cilantro (A small handful, for the sauce)
- 3 tsp red pepper flakes (For the sauce)
- salt (To taste, for the sauce)
- black pepper (To taste, for the sauce)
- sun-dried tomatoes (Chopped; for serving)
- sprouted mixed seeds (Optional; Go Raw brand is suggested)
- fresh cilantro (For garnish)
- red pepper flakes (For garnish)

Soak the raw cashews in water for 1–2 hours. Drain them thoroughly before making the sauce.

Clean the jicama and remove all of its skin. Peeling completely is critical because the skin is not intended to remain on the vegetable.

Feed the peeled jicama through a spiralizer to create noodle-like strands.

Place the jicama noodles in a large bowl.

Add the 2 teaspoons of lime juice and a pinch of salt to the jicama noodles. Toss until the strands are lightly coated.

Add the soaked cashews, spring water, chopped mango, hemp seeds, agave, 1 tablespoon lime juice, diced onion, cilantro, red pepper flakes, salt, and black pepper to a blender.

Blend the sauce until completely smooth and creamy, pausing to scrape down the sides if needed.

Pour the mango cashew sauce over the jicama noodles.

Stir gently until all of the jicama strands are evenly coated with sauce.

Serve the noodles topped with chopped sun-dried tomatoes, sprouted mixed seeds if using, fresh cilantro, and additional red pepper flakes.
