Ingredients

  • 4 potatoes (large, peeled)
  • 2 tbsp olive oil (divided between the potatoes and the filling)
  • 1 onion (finely chopped)
  • 2 gousses garlic (minced)
  • 300 g ground beef (or a plant-based alternative for a vegetarian version)
  • 2 tomatoes (diced)
  • 1 green bell pepper (diced)
  • 1 tsp paprika
  • salt (to taste)
  • black pepper (to taste)
  • 80 g grated cheese (for browning)
  • 2 tbsp fresh parsley (chopped, for finishing)

Steps

    Preheat the oven to 200 °C. Wash and peel the potatoes, then cut a thin slice off the top of each one so they can be hollowed out.

    Carefully scoop out the center of the potatoes with a spoon, leaving a wall about 1 cm thick so the bowls are sturdy enough. Reserve the removed potato flesh for another preparation.

    Brush the outside and inside of the potatoes with about 1 tbsp of olive oil. Season lightly with salt, place them in a baking dish, and bake for 25 to 30 minutes, until they begin to soften without collapsing.

    Meanwhile, heat the remaining oil in a large skillet over medium heat. Add the onion and sauté for 3 to 4 minutes, until translucent.

    Add the garlic and bell pepper. Cook for another 2 to 3 minutes, until the pepper is slightly tender and the garlic is fragrant.

    Add the ground beef. Cook, breaking it up with a wooden spoon, until well browned and no pink remains.

    Add the diced tomatoes, paprika, salt, and pepper. Simmer for 8 to 10 minutes, until the filling thickens and almost no liquid remains.

    Remove the partially baked potatoes from the oven and divide the filling among the bowls, pressing it down lightly without filling above the rim.

    Sprinkle with grated cheese, then return the dish to the oven for 10 to 15 minutes, until the potatoes are completely tender and the cheese is melted and golden brown.
