Vegan Peanut Butter Cookies

Vegan Peanut Butter Cookies

Imported by Starr2 on SeeMeCook

Chewy, soft-centered peanut butter cookies with crisp-setting edges and a topping of finely chopped dry-roasted peanuts. Light corn syrup helps them stay moist and tender without overpowering the peanut flavor.

Ingredients

  • 1.5 cup all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1.25 cup creamy peanut butter (Use processed peanut butter for the best texture; natural peanut butter may make the cookies dry and tough.)
  • 1 cup organic light brown sugar (Packed)
  • 0.5 cup light corn syrup
  • 0.25 cup coconut oil (Melted and cooled)
  • 3 tbsp water
  • 1 tsp vanilla extract
  • 0.333333 cup dry-roasted peanuts (Chopped fine)

Steps

  1. 1

Whisk the flour, baking soda, and salt together in a bowl.

  2. 2

In a large bowl, whisk the peanut butter, packed brown sugar, corn syrup, melted and cooled coconut oil, water, and vanilla extract until the mixture is well combined and smooth.

  3. 3

Using a rubber spatula, stir the flour mixture into the peanut butter mixture until just combined. Do not overmix.

  4. 4

Cover the bowl with plastic wrap and refrigerate the dough until firm, at least 2 hours and up to 24 hours. Keep the dough chilled until ready to form and bake because it is quite soft.

  5. 5

Adjust the oven rack to the middle position and heat the oven to 350°F.

  6. 6

Line two rimmed baking sheets with parchment paper.

  7. 7

Working with 2 tablespoons of dough at a time, roll the dough into balls and place them 2 inches apart on the prepared baking sheets.

  8. 8

Using the bottom of a greased drinking glass, press each dough ball to 1/2-inch thickness.

  9. 9

Sprinkle the chopped peanuts over the flattened dough and press them lightly to adhere.

  10. 10

Bake one sheet at a time for 12 to 14 minutes, rotating the sheet halfway through baking. The cookies should be puffed, with edges beginning to set while the centers remain soft.

  11. 11

Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack.

  12. 12

Let the cookies cool completely before serving.

Notes

Cookies can be stored at room temperature for up to 3 days. The source recommends processed peanut butter rather than natural peanut butter for the best texture.
