Healthy Rice Flour Chocolate Cake

- 55 g honey (50-60g; use more if you prefer a sweeter cake)
- 2 tbsp rice oil
- salt (a pinch)
- 90 g rice flour
- 15 g cocoa powder (cacao powder)
- 5 g baking powder
- 4 tbsp milk

Preheat your oven to 180°C (350°F).

In a mixing bowl, combine the 2 eggs, 50-60g honey, 2 tablespoons of rice oil, and a pinch of salt. Whisk until well combined.

Add 90g rice flour, 15g cocoa powder, and 5g baking powder to the wet ingredients. Mix until the batter is smooth.

Stir in 4 tablespoons of milk to adjust the consistency of the batter.

Pour the batter into a cake tin and bake in the preheated oven for 25–30 minutes.

Once baked, immediately wrap the cake in plastic wrap or place it in an airtight container to prevent the rice flour from drying out.
Notes
Since this recipe uses rice flour, it can dry out quickly. If it becomes dry, sprinkle a tiny bit of water over a slice and microwave it for a few seconds to soften it. Leftovers can be frozen for a quick breakfast or snack.
