Ingredients
- 30 g WeetBix bricks (crushed or broken up for the base)
- 125 ml Hot water (boiling)
- 1 tbsp Maple syrup
- 1 cup Vanilla Greek yoghurt (Banana-flavoured yoghurt may also be used)
- 1 scoop Banana paddle pop protein powder (Macromike brand)
- Water (a dash, for mixing)
- 1 Small banana (sliced; divide between the base layer and topping)
- 1 Digestive biscuit (or another plain cracker of choice; crumble for topping)
- 1.5 tbsp Biscoff spread (melted; source gives a range of 1–2 tablespoons; or use nut butter of choice)
Steps
- 1
Add the boiling water to the WeetBix in a bowl. Let the WeetBix soften, then press it evenly over the bottom of the bowl.
- 2
Stir the maple syrup into the softened WeetBix base.
- 3
Slice the banana into coins and arrange some in a single layer over the WeetBix.
- 4
Mix the banana protein powder with the vanilla Greek yoghurt and a dash of water until smooth and thick.
- 5
Spread the yoghurt mixture over the WeetBix base.
- 6
Top with the remaining banana slices.
- 7
Crumble the digestive biscuit over the top, then drizzle with melted Biscoff spread.
- 8
Cover and refrigerate overnight, or for a couple of hours, before serving.
