Vegan Maple Apple Blondies

- 120 g vegan butter (melted)
- 100 g applesauce
- 0.25 lemon (juice)
- 100 g powdered sugar
- 1.5 red apple (diced)
- 1 TL vanilla extract
- 1 Prise salt
- 1 TL ground cinnamon
- 30 ml maple syrup
- 20 ml water
- 230 g brown sugar
- 370 g all-purpose flour
- 1 TL baking powder

Preheat the oven to 180 °C (top and bottom heat) or 160 °C (fan oven).

Melt the vegan butter in a small saucepan over low heat.

Wash, core, and dice the apples into small cubes. Drizzle with some lemon juice to prevent browning.

In a large mixing bowl, combine the melted butter with the brown sugar, applesauce, maple syrup, vanilla extract, and water.

Mix the flour with baking powder, cinnamon, and a pinch of salt, then stir into the wet ingredients until a smooth batter forms.

Gently fold the diced apples into the batter.

Spread the batter into a greased or parchment-lined baking pan.

Bake in the preheated oven for approx. 25-30 minutes until the blondies are golden brown (test with a toothpick).

Allow to cool completely after baking. Optionally brush with a glaze made from powdered sugar and a little water or lemon juice.
Notes
The blondies taste best when completely cooled, as they then reach the perfect consistency.
