Ingredients
- 0.5 cup sugar
- 2 eggs (Plus 1 egg yolk)
- 1 egg yolk
- 0.5 tsp vanilla
- 0.5 tsp salt
- 0.5 tsp instant coffee or espresso powder
- 2 tbsp cocoa powder
- 0.5 cup dark chocolate (For the cake)
- 0.25 cup TRULY 100% Extra Virgin Olive Oil (For the cake)
- 2 tbsp TRULY 100% Extra Virgin Olive Oil (For the olive oil ganache)
- 4 oz chocolate (For the olive oil ganache)
- 1 tbsp honey (For the olive oil ganache)
- 0.5 tsp rose extract (Optional; for the olive oil ganache)
- salt (A pinch; for the olive oil ganache)
Steps
- 1
Preheat the oven to 350°F (175°C). Line a 6-inch cake or tart pan with parchment paper.
- 2
In a medium-sized bowl, whisk together the eggs, egg yolk, sugar, vanilla, and the measured salt until combined.
- 3
Sift the cocoa powder and instant coffee or espresso powder into the egg-and-sugar mixture, then whisk until incorporated.
- 4
Place the dark chocolate and ¼ cup olive oil in a microwave-safe bowl. Heat in 30-second intervals, stirring between intervals, until melted together.
- 5
Whisk half of the melted chocolate-and-oil mixture into the egg mixture. Add the remaining half and whisk until combined.
- 6
Pour the batter into the parchment-lined 6-inch cake or tart pan.
- 7
Bake at 350°F (175°C) for about 28 minutes. The center should remain slightly loose; it will become pleasantly dense as the torte sets.
- 8
Allow the torte to cool. The center may fall slightly as it cools. Remove it from the pan before glazing.
- 9
For the ganache, place the olive oil and chocolate in a microwave-safe bowl. Heat in 30-second intervals, stirring between intervals, until melted together.
- 10
Stir the honey, pinch of salt, and optional rose extract into the melted chocolate-and-oil mixture.
- 11
Pour the ganache over the cooled torte and allow the chocolate to crystallize, or set, before serving.
Notes
The recipe makes one 6-inch torte for 2–4 people. Double the recipe for an 8-inch pan. The recipe notes that some ganache will remain; use leftovers as a chocolate sauce for ice cream. The source does not specify the exact cooling or ganache-setting time.
