Ingredients
- 1 kg Chicken pieces (Beef may be substituted; chicken is used for the nutrition estimate.)
- 0.5 cup Cooking oil (For frying the onions, potatoes, and chicken.)
- 150 g Onions (Sliced or chopped.)
- 150 g Potatoes (Cut into pieces; fry until lightly colored.)
- 1 tsp Chicken masala (Used to marinate the chicken.)
- 1 tsp Black pepper (Used to marinate the chicken.)
- 1 tsp Dania jeera (Coriander-cumin spice blend; used to marinate the chicken.)
- 1 tsp Paprika (Used to marinate the chicken.)
- 150 g Tomatoes (Blended.)
- 1 Bell pepper (Blended with the tomatoes and some maziwa mala; approximately 120 g edible portion.)
- 500 ml Maziwa mala (Cultured milk; blend a small amount with the tomatoes and bell pepper, then add the remainder to the sauce.)
- 2 tbsp Biryani masala (Added to the sauce.)
- Salt (To taste; add to both the sauce and rice as needed.)
- 2 tbsp Tomato paste (Added to the sauce.)
- 600 g Long-grain rice (The transcript says to cook the rice separately; quantity was not provided and is estimated for six servings.)
- Water (As needed to cook the rice and simmer the sauce.)
- Food coloring (Optional; the creator mentions adding color to the rice, but no amount is given.)
- Fresh coriander leaves (For garnishing.)
Steps
- 1
Prepare the chicken by coating it with the chicken masala, black pepper, dania jeera, paprika, and a little oil. Mix thoroughly so the spices cover all the pieces.
- 2
Heat the cooking oil in a large heavy-based pot over medium heat. Add the onions and fry until golden brown, stirring regularly so they color evenly without burning.
- 3
Add the potatoes to the pot and fry until they develop a light golden color. Remove them if necessary to prevent overcooking while the meat cooks.
- 4
Heat a separate pan, add the marinated chicken, and fry until the pieces are lightly browned and sealed on the outside.
- 5
Blend the tomatoes and bell pepper with a small amount of maziwa mala until smooth.
- 6
Pour the blended tomato mixture into the pot with the browned chicken. Add the biryani masala, the remaining maziwa mala, salt to taste, and tomato paste.
- 7
Stir the sauce thoroughly, bring it to a boil, then reduce the heat and simmer until the chicken is cooked through and the sauce has thickened. The chicken should be tender and the sauce glossy rather than watery.
- 8
Return the fried potatoes to the sauce and simmer briefly until they are tender and coated with the biryani gravy.
- 9
Meanwhile, cook the rice separately in salted water until the grains are tender but remain separate and fluffy. Add food coloring if desired, following the creator's suggestion, and avoid overcooking the rice.
- 10
Spoon the cooked rice onto a serving platter or into the biryani pot, then place the chicken, potatoes, and sauce over or alongside the rice.
- 11
Garnish with fresh coriander leaves and serve hot for Eid or another special occasion.
Notes
The description does not specify a rice quantity, so 600 g is an estimate for six servings. Beef may replace chicken, but it will require a longer simmer—cook until completely tender. The transcript indicates that the rice is cooked separately and may be colored.
