Corn Chilli Cheese Dumpling Nachos with Spicy Mayo

Ingredients
- 1 cup Boiled corn kernels (The source also says charred corn may be used.)
- 0.5 cup Cream cheese
- 2 Jalapeños (Finely chopped; remove the seeds for a milder version. Spicy green chiles may also be used.)
- 2 stalks Green onion whites (Chopped; use 1–2 stalks as needed.)

- Black pepper (To taste.)
- Sugar (A pinch, to balance the filling.)
- 8 sheets Samosa patti sheets (Use 7–8 sheets; wonton wrappers may be substituted. Each sheet is cut into three equal parts.)
- Water (For sealing the pastry edges.)
- Neutral oil (For brushing the parchment and dumplings; amount as needed.)
- 0.25 cup Mayonnaise (For the spicy mayo.)
- 1.5 tbsp Sriracha
- 0.5 tsp Rice wine vinegar
- Green onion greens (Sliced, for garnish; amount as needed.)
- Black sesame seeds (For garnish; amount as needed.)

Preheat the air fryer to 200°C / 400°F. If using parchment, cut it to fit the basket and leave room for air to circulate around the dumplings.

Place the boiled corn kernels, chopped green onion whites, and chopped jalapeños in a mixing bowl. Add the cream cheese and stir until the filling is evenly combined.

Season the filling with salt and black pepper to taste, then add a pinch of sugar. Mix thoroughly so the seasoning is distributed throughout.

Cut each samosa patti sheet into three equal pieces. If using wonton wrappers, use them as they are.

Place a spoonful of filling in the center of one pastry piece, leaving a clear border around the edges. Moisten the edges with water, place another pastry piece over the filling, and press firmly around the edges to seal. Repeat with the remaining pastry and filling.

Brush the parchment lightly with oil and place the filled dumplings on it in a single layer. Brush the tops of the dumplings with a little more oil.

Air-fry at 200°C / 400°F for 10–12 minutes, flipping halfway through, until the pastry is golden brown and crisp. Work in batches if necessary so the dumplings are not crowded.

While the dumplings cook, whisk the mayonnaise, sriracha, a pinch of salt, and rice wine vinegar in a small bowl until smooth and well combined.

Transfer the hot, crispy dumplings to a serving plate. Drizzle them with the spicy mayo.
