Ingredients
- 100 g Almond flour
- 20 g Coconut flour
- 3 Eggs
- 50 g Butter (Melted)
- Sugar substitute (To taste)
- 0.5 ч. л. Baking powder
- 200 g 33% heavy cream (Chilled)
- 300 g Cream cheese
- Sugar substitute and vanillin (To taste)
- 120 g Espresso (Add 20 g to the cream; use 100 g for soaking)
- 20 g Cognac (Add to the coffee for soaking)
- 10 g Cocoa powder (For decoration)
Steps
- 1
Brew the espresso, let it cool, and add the cognac. Set the coffee aside for soaking the sponge cake.
- 2
For the batter, combine the almond flour, coconut flour, and baking powder. Separate the egg whites from the yolks.
- 3
Beat the egg whites to stiff peaks, add the sugar substitute to taste, and mix.
- 4
Combine the egg yolks with the melted butter. Add the dry ingredients and mix until smooth.
- 5
Combine the egg white and egg yolk mixtures and gently fold them together.
- 6
Spread the batter onto a baking sheet lined with parchment paper, greased if necessary. Use a spatula or wet hands to shape it into a square approximately 1 cm thick. Alternatively, pipe the batter into cookie shapes using a pastry bag.
- 7
Bake in an oven preheated to 180°C for 15 minutes.
- 8
Let the sponge cake cool, remove the parchment paper, and cut the sponge cake into strips.
- 9
For the cream, whip the heavy cream to stiff peaks. Add the cream cheese, sugar substitute, vanillin, and 20 g of chilled espresso. Mix.
- 10
Arrange the sponge cake strips on the bottom of the dish, first soaking them with the coffee. Spread a layer of cream on top, then repeat the layers. The recipe makes three layers.
- 11
Decorate the top of the cake with the remaining cream using a pastry bag.
- 12
Refrigerate the tiramisu for 6–8 hours.
- 13
Dust the top with cocoa powder before serving.
