Ingredients
- 1 lb Italian sausage (Mild or hot)
- 1 Onion (Diced)
- 15 oz Diced tomatoes (Plain or fire-roasted; undrained)
- 1 cup Chicken broth (Low-sodium)
- 3 cloves Garlic (Minced)
- 2 tsp Italian seasoning
- 0.25 tsp Black pepper
- 0.25 tsp Sea salt
- 18 oz Tortellini (Refrigerated; use gluten-free or dairy-free if needed)
- 0.5 cup Coconut milk (Or heavy cream)
- Parmesan cheese (Grated, for serving; optional)
- Fresh parsley (Chopped, for serving; optional)
Steps
- 1
In a large skillet over medium heat, cook the sausage, breaking it into crumbles as it cooks, until browned and cooked through.
- 2
Transfer the cooked sausage to a crockpot.
- 3
Add the diced onion, undrained diced tomatoes, chicken broth, minced garlic, Italian seasoning, black pepper, and sea salt to the crockpot. Stir to combine.
- 4
Cover and cook on LOW for 4 to 6 hours, or on HIGH for 2 to 3 hours.
- 5
Add the refrigerated tortellini and pour the coconut milk (or heavy cream) over the top.
- 6
Stir well so every tortellini is sitting in some liquid.
- 7
Cover and cook on HIGH for 8 to 15 minutes, until the tortellini is tender. Start checking at 8 minutes.
- 8
Serve warm, topped with grated Parmesan and chopped fresh parsley if desired.
Notes
The stated cook times vary by slow-cooker setting; total time uses the longest listed cook time. Optional garnish amounts are unspecified. Tortellini may be substituted with gluten-free or dairy-free tortellini if needed.
