Ingredients

  • 2 ears Corn kernels (Kernels cut from the ears)
  • 1 Vegan egg equivalent (The author uses one 3 Tbsp cube of DIY Eggs From Plants; alternatively, Eggs From Plants may be used)
  • 0.333 cup Cornmeal
  • 2.5 tbsp Flour
  • 0.25 tsp Salt
  • 2 tbsp Olive oil (For the fritter mixture)
  • 2.5 tbsp Olive oil (For the pan; source specifies 2–3 Tbsp)
  • Salsa (To serve)
  • 1 cup Split dried yellow moong dal (For the optional DIY Eggs From Plants; blend with the ingredients below)
  • 1.333 cup Water (For the optional DIY Eggs From Plants)
  • 1 tsp Tapioca (For the optional DIY Eggs From Plants)
  • 2 tbsp Nutritional yeast (For the optional DIY Eggs From Plants)
  • 1 tsp Baking powder (For the optional DIY Eggs From Plants)
  • 0.5 tsp Onion powder (For the optional DIY Eggs From Plants; the author may omit it when using the mixture for sweet baking)
  • 0.5 tsp Turmeric (For the optional DIY Eggs From Plants)
  • 0.5 tsp Salt (Optional, for the DIY Eggs From Plants; kala namak may be used instead)
  • 0.5 tsp Kala namak (Optional alternative to the additional salt in DIY Eggs From Plants)

Steps

  1. 1

If making the DIY Eggs From Plants, combine the split dried yellow moong dal, water, tapioca, nutritional yeast, baking powder, onion powder, and turmeric in a blender. Add either the optional salt or kala namak, if desired.

  2. 2

Blend the DIY egg mixture for a couple of minutes. The author freezes it in 3 Tbsp cubes, with each cube equivalent to one egg.

  3. 3

Combine the corn kernels, one egg equivalent, cornmeal, flour, 1/4 tsp salt, and 2 Tbsp olive oil well.

  4. 4

Heat a cast-iron pan over medium-high heat, then add 2–3 Tbsp olive oil.

  5. 5

Scoop about 1/4 cup or a little more of the mixture per fritter into the pan, flattening each fritter in the pan.

  6. 6

Cook the fritters until browned on each side.

  7. 7

Serve with salsa. The author also mentions homemade pico de gallo as an accompaniment.

Notes

The post does not specify a yield, fritter cooking time, or detailed directions for thawing the frozen DIY egg cubes. For the fritters, use one 3 Tbsp cube of the prepared mixture as one egg equivalent.
