  • carbonated water (Add enough to make the batter; add more if necessary)
  • 0.5 cup all-purpose flour for dry batter
  • salt for dry batter (To taste)
  • additional spices for dry batter (Any other spices desired)
  • 0.5 cup mayonnaise
  • 0.25 tsp capers (Optional; chopped pickles may be used instead)
  • fresh dill (A handful, chopped)
  • 0.25 tsp onion powder for sauce
  • 0.25 tsp garlic powder for sauce
  • salt for sauce (To taste)
  • 0.5 tsp lemon juice
  • 0.5 tsp relish
  • lemon zest (Some, to taste)
  • burger buns (Quantity not specified)
  • butter (For toasting the buns; quantity not specified)
  • American cheese slices (Place on the bottom bun and melt; quantity not specified)
  • oil for frying (For frying the coated fish; quantity not specified)

Steps

  1. 1

Cut the cod or tilapia fillets into the desired burger shape. Pat the pieces completely dry, season both sides with salt, and set them aside.

  2. 2

Prepare the wet batter by combining 1 cup flour, cornstarch, garlic powder, onion powder, salt, paprika, and carbonated water. Mix well, adding more soda water if necessary, until a batter forms. The carbonated water is intended to make the batter airy.

  3. 3

Prepare the dry batter by placing 1/2 cup flour in a bowl and mixing in salt and any other desired spices.

  4. 4

Prepare the sauce by mixing the mayonnaise, capers or chopped pickles, fresh dill, onion powder, garlic powder, salt, lemon juice, relish, and lemon zest until well combined.

  5. 5

Dip each fish piece into the wet batter, coating both sides completely.

  6. 6

Transfer the coated fish to the dry batter and coat it on both sides.

  7. 7

Dip the fish into the wet batter a second time.

  8. 8

Fry the coated fish in oil over medium-high heat until cooked through and crisp, about 3–4 minutes.

  9. 9

Toast the burger buns with butter.

  10. 10

Place American cheese slices on the bottom halves of the toasted buns and let the cheese melt.

  11. 11

Assemble each burger by placing the fried fish on the melted cheese, adding the sauce, and finishing with the top bun. Serve immediately.

Notes

The source does not specify the amount of fish, oil, buns, butter, or cheese, nor does it provide an exact frying temperature beyond medium-high heat. Use enough carbonated water to make the wet batter, and cook the fish until done. Take care when zesting the lemon.
