Ingredients

  • 1.5 cup Broccoli (finely chopped)
  • 0.5 cup Mozzarella cheese (shredded)
  • 0.25 cup Almond flour (can substitute with oat flour or flour of choice)
  • 2 tbsp Onion (finely minced)
  • 1 tbsp Fresh parsley (finely chopped)
  • 2 Eggs (large)

Steps

    Preheat your oven to 180°C (350°F). Lightly grease a cupcake or muffin tin with a small amount of oil or butter to ensure the bites don't stick.

    Prepare the vegetables by finely chopping the broccoli florets until they are in very small pieces. Finely mince the onion and the fresh parsley.

    In a medium-sized mixing bowl, combine the finely chopped broccoli, shredded mozzarella cheese, almond flour, minced onion, and chopped parsley.

    Add the two eggs to the bowl and stir the mixture thoroughly until all ingredients are well-combined and the flour is fully incorporated into the wet mixture.

    Spoon the mixture into the prepared cupcake molds, filling each one about 3/4 of the way full. Press down slightly with the back of a spoon to level the tops.

    Bake in the preheated oven for 15 to 20 minutes, or until the bites are firm to the touch and the edges are starting to turn a light golden brown.

    Remove from the oven and allow the bites to cool in the tin for at least 5 minutes before removing. This helps them set and prevents them from breaking apart.
