Ingredients

  • 150 g frozen fruit (such as strawberries or mixed berries)
  • 30 g protein powder (whey or casein works best for fluffing)
  • 100 ml milk of choice (dairy or plant-based milk)
  • 0.5 tsp Xanthan gum (essential for the fluffy texture)

Steps

    Place 150g of frozen fruit into a high-speed blender or food processor.

    Add 30g of protein powder, 100ml of milk, and approximately half a teaspoon of xanthan gum to the blender.

    Pulse or blend on low speed initially to break down the frozen fruit into smaller pieces.

    Increase the speed to high and blend for 2-3 minutes. The mixture will begin to aerate and significantly increase in volume as the xanthan gum and protein powder create the 'fluff' texture.

    Continue blending until the mixture is thick, smooth, and has roughly doubled or tripled in size.

    Transfer the protein fluff to a large bowl or glass and serve immediately while cold.

Notes

For the best results, use a powerful blender. If the mixture is too thick to blend, add a tiny splash more milk, but be careful not to add too much or it won't fluff up. Casein protein typically produces a thicker fluff than whey.
