Ingredients
- 150 g frozen fruit (such as strawberries or mixed berries)
- 30 g protein powder (whey or casein works best for fluffing)
- 100 ml milk of choice (dairy or plant-based milk)
- 0.5 tsp Xanthan gum (essential for the fluffy texture)
Steps
- 1
Place 150g of frozen fruit into a high-speed blender or food processor.
- 2
Add 30g of protein powder, 100ml of milk, and approximately half a teaspoon of xanthan gum to the blender.
- 3
Pulse or blend on low speed initially to break down the frozen fruit into smaller pieces.
- 4
Increase the speed to high and blend for 2-3 minutes. The mixture will begin to aerate and significantly increase in volume as the xanthan gum and protein powder create the 'fluff' texture.
- 5
Continue blending until the mixture is thick, smooth, and has roughly doubled or tripled in size.
- 6
Transfer the protein fluff to a large bowl or glass and serve immediately while cold.
Notes
For the best results, use a powerful blender. If the mixture is too thick to blend, add a tiny splash more milk, but be careful not to add too much or it won't fluff up. Casein protein typically produces a thicker fluff than whey.
