Ingredients
- 4 Eggs (Separated)
- 150 g Sugar
- 500 g Mascarpone
- 260 g Ladyfingers
- Lime juice (For soaking ladyfingers and flavoring cream)
- Whipped cream (For topping)
- Lime zest (For garnish)
Steps
- 1
Separate the 4 eggs into two bowls (yolks and whites).
- 2
Whisk the egg yolks with the 150g of sugar until the mixture is pale and creamy.
- 3
Add the 500g of mascarpone to the yolk mixture and fold in gently until smooth. Incorporate lime juice or zest as desired for the mojito flavor.
- 4
In a separate bowl, whisk the egg whites until stiff peaks form, then gently fold them into the mascarpone mixture to create a light cream.
- 5
Prepare a lime-based soaking liquid (typically lime juice mixed with a little water or simple syrup). Briefly dip each ladyfinger into the lime liquid.
- 6
Arrange a layer of soaked ladyfingers in the bottom of a serving dish.
- 7
Spread half of the mascarpone cream over the ladyfingers.
- 8
Repeat with another layer of soaked ladyfingers and the remaining mascarpone cream.
- 9
Top the dessert with lime-flavored whipped cream.
- 10
Refrigerate for at least 4 hours (or overnight) to allow the flavors to meld and the structure to set.
- 11
Garnish with fresh lime zest before serving.
Notes
For a more authentic mojito flavor, you can add finely chopped fresh mint to the mascarpone layers or the soaking liquid. Ensure the dessert is served very cold.
