Creamy Coconut Garlic Chicken Breast

Ingredients
- 2 chicken breasts (scored with cuts on top)
- salt (to taste)
- 0.5 tsp black pepper (divided; some for seasoning chicken, half teaspoon for the sauce)
- paprika (to taste)
- 3 tbsp butter (divided (1 tbsp for searing, 2 tbsp for sauce))
- 1 tbsp olive oil (for frying)
- 5 garlic cloves (3 whole cloves for searing, 2 minced for sauce)
- 0.5 onion (chopped)
- 1 cup coconut milk
- 0.5 cup water
- parsley (chopped, to taste)

Make shallow cuts across the top of 2 chicken breasts in a cross-hatch pattern.

Season the chicken breasts with salt, black pepper, and paprika to taste. Spread the seasonings thoroughly over the meat with your hands.

In a pan over medium heat, add 1 tablespoon of butter and let it melt.

Add a drizzle of olive oil and 3 whole garlic cloves to the pan.

Place the seasoned chicken breasts in the pan and fry on both sides until golden brown and cooked through.

Once the chicken is browned, remove the chicken breasts and the 3 whole garlic cloves from the pan and set them aside.

In the same pan, add 2 more tablespoons of butter and stir with a spatula until melted.

Add half a chopped onion and 2 minced garlic cloves to the butter. Sauté until fragrant.

Pour in 1 cup of coconut milk and half a cup of water.

Add chopped parsley to taste and half a teaspoon of black pepper. Mix everything together.

Return the chicken breasts and the previously removed whole garlic cloves to the pan.

Cover the pan and let it simmer for 5 minutes.

Spoon some of the sauce over the chicken before serving to ensure it is well-coated and flavorful.
Notes
Scoring the chicken helps the seasonings and sauce penetrate deeper into the meat. The whole garlic cloves used during the initial fry are returned at the end to infuse more flavor into the final sauce.
