Ingredients
- 2 Medium rice paper sheets
- 1 Extra-large egg
- 0.25 tsp Baking powder
- 2 tbsp Thick Greek yogurt (Use between 2 and 3 tbsp; it can be plain or flavored.)
- Blueberries (A small handful; do not add too many to prevent the pastry from becoming soft.)
- Honey or agave syrup (A generous amount, for drizzling.)
Steps
- 1
Preheat the oven to 375 °F (190 °C). If using an air fryer, prepare the appliance to cook the pastry for 10 minutes.
- 2
Beat the extra-large egg with the baking powder in a bowl.
- 3
Quickly soften one rice paper sheet in the egg mixture. Remove or brush off the excess mixture.
- 4
Dip the second rice paper sheet into the mixture and place it over the first softened sheet, forming a double layer.
- 5
Spread the Greek yogurt over the rice paper.
- 6
Add the blueberries on top, without adding too many.
- 7
Drizzle the honey or agave syrup over the blueberries and yogurt.
- 8
Fold the four sides of the rice paper inward to seal the pastry.
- 9
Place the pastry on parchment paper and bake it at 375 °F (190 °C) for 20-25 minutes, until cooked through and flaky. Alternatively, cook it in the air fryer for 10 minutes.
Notes
The source does not specify a temperature for the air fryer. Do not add too many blueberries, as the pastry may become soft. The yogurt can be plain or flavored, and the honey can be replaced with agave syrup.
