Ingredients

  • onion (chopped; some of the salt is added during sautéing)
  • celery stalks or celeriac (chopped)
  • carrot (chopped or cut as desired)
  • red bell pepper (chopped)
  • olive oil (for sautéing the vegetables)
  • potatoes (peeled and cut; quantity not specified)
  • water (enough to cover the potatoes and the initial vegetables)
  • zucchini (cut; added once the potatoes are half-cooked)
  • green beans (trimmed and cut as desired; added together with the zucchini)
  • tomatoes (grated; use one large bowl, exact quantity not specified)
  • salt (to taste; some is used to sauté the vegetables, and the rest to adjust the final seasoning)
  • pepper (to taste)
  • lovage (added at the end)
  • fresh bread (for serving, optional)
  • red onion (for serving, optional)

Steps

  1. 1

Heat a little olive oil in a pot. Add the chopped onion, celery stalks or celeriac, carrot, and red bell pepper.

  2. 2

Sprinkle some of the salt over the vegetables in the pot and sauté them until they begin to soften and release liquid. The salt added at this stage helps the vegetables release liquid more quickly.

  3. 3

Add the potatoes and pour in enough water to cover them and allow the vegetables to cook. Boil until the potatoes are half-cooked.

  4. 4

Add the zucchini and green beans. Continue boiling until the potatoes, zucchini, and green beans are cooked.

  5. 5

Add one large bowl of grated tomatoes. Do not add any more water; the tomatoes form the rich base of the soup.

  6. 6

Adjust the soup with salt and pepper, then add the lovage at the end.

  7. 7

Serve the soup hot or cold, with a piece of fresh bread and red onion.

Notes

The source does not specify exact quantities, temperatures, or cooking times; these should be adjusted according to the amount of vegetables and the desired texture. The soup can be eaten cold, straight from the refrigerator.
